Originally built in the late 17th century, the monastery came to life through the ambition of Sister Rosa Pandolfi, a descendant of the noble family Pontone di Scala who had taken up residence in Conca dei Marini. Finally it was purchased by a Roman hotelier Mr. Marcucci, who recognised the property’s historic value and the old convent was transformed into a hotel in 1924. Esteemed for its authentic simplicity typical of monastic life, the Hotel Santa Rosa became one of the 39 castle hotels of Italy. The hotel’s motto was “At each window, the sun."

Initially constructed in the 8th century, the abbey was partially destroyed throughout the centuries and was rebuilt again in the 10th and 11th centuries. The abbey passed through the hands of various families, until it was acquired by the Costanzi family who restored it last in 1998. Some of the cells in which monks used to reside have now been turned into lovely guestrooms. There is also a church in the hotel grounds, which still operates in the weekends.

Located in the majestic region of Alhambra, this monastery was built in the 15th century by Queen Isabel, when the Christians retook the city from the Moors who were reigning there for many hundreds of years. The architecture and style of the building reflects this amalgamation of Arab and Christian elements that was characteristic of the era. After Isabel and her husband Ferdinand died, they were buried in the monastery's grounds, and a chapel was erected in their memory. Through the ages, the building has been used as barracks, home for the elderly, school, and so on, until it was made into a parador in 1944.
