The hotel has its own herbal garden with a variety of over 10 different locally grown herb plants, which are being used in food preparations as well as in the mixology. Moreover, the hotel grows its own selection of fruits like apples, figs and lemons. It also produces its own olive oil from 8 olive trees located on the grounds. The hotel collects rainwater as well as uses water from the ground wells in order to water the vast garden area.

La struttura non è stata appositamente costruita con materiali da risorse sostenibili in quanto antica e risalente al 400. I materiali di costruzione però se anche antichi sono in realtà sostenibili: muri in pietra locale e calce, tetto in tegole di cotto e legna. Si trova all'interno di un centro storico di un borgo medievale ed è stata restaurata rispettando la natura originale della casa. Non abbiamo cestini della differenziata nelle camere ma provvediamo a differenziare noi ed è presente un cestino della differenziata nelle aree comuni. non abbiamo dipendenti, è una struttura a gestione familiare e ci occupiamo noi di agire secondo scelte sostenibili. provvediamo noi ad accendere e spegnere il riscaldamento con un sistema automatico ad alimentazione termodinamica che provvede a scaldare anche l'acqua e a produrre energia elettrica. Le pareti in pietra grosse più di un metro consentono di mantenere la temperatura e avere caldo d'inverno e fresco d'estate, questo aiuta a ridurre i consumi.
